Another yummy pudding that is full of flavour and peanut butter. Although not everyone likes this twist on a classic it adds another flavour of nutty richness.
Calories: 250kcal (1/16 of a 20cm square baking tin)
Ingredients:
225g of crunchy peanut butter (this is better than smooth as it adds more texture and crunch.)
200g of dark chocolate broken into pieces
280g of soft light brown sugar
3 medium eggs
100g of self raising flour
1. Set aside 50g each of the peanut butter and chocolate. Heat the oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with parchment paper.
2. Gently melt the remaining chocolate, all of the sugar and peanut butter over a pan of simmering water. Keep stirring until the sugar has just about melted and then take off the heat. Beat in the eggs one by one. then stir in all the flour and pour into the tin.
3. Melt the remaining peanut butter in the microwave for 45 seconds or until it is the consistency of runny honey and drizzle of the brownie and then put into the oven for 30-35 mins.
4. Once out of the oven leave to cool for around 10 mins and then melt the remaining chocolate that was set aside earlier and melt it and drizzle it over the brownie and you are ready to serve.
