Hi guys,
Today we are going to make a banana loaf. It is a plain, simple recipe that is quick and easy to make, raisins are optional, they make a simple but yummy difference to a traditional recipe. This is a lovely with a cup of tea.
We will be putting our own magic into a BBC Good Food Recipe.

Ingredients:
- 285g/10oz plain flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 110g/4oz butter, plus extra for greasing
- 225g/8oz caster sugar
- 2 free-range eggs
- 4 ripe bananas, mashed
- 85ml/3fl oz buttermilk (or normal milk mixed with 1½ tsp lemon juice or vinegar)
- 1 tsp vanilla extractand raisins (optional)1. Set the oven to 180C/350F/Gas 4 and line the loaf tin.2. Mix the butter and sugar together until light and fluffy.3. Add the egg, mashed banana, vanilla extract and buttermilk (we used normal milk and half a teaspoon of lemon juice)
4. Sift all of the dry ingredients (plain flour, bicarbonate of soda and salt). into the wet ingredients and fold into the wet mixture and add raisins (optional).
5 . Pour the mixture into the loaf tin and place into the oven for an hour or until golden-brown and well-risen.
6. Remove from the tin and place on the cooling rack.
