Rainbow Cookies

Hey guys,

Here is a fun recipe that you can do with the younger ones. They are colourful, fun and make the perfect treat at a birthday party or celebration.

Ingredients: 

175g of unsalted butter, softened
50g of caster sugar
50g of icing sugar
2 egg yolks
2 tsp of vanilla extract
300g of plain flour
zest and juice of one orange
140g of icing sugar, sifted
lots of sprinkle, to decorate

Method: 


1. Heat the oven to 200C/180C fan/gas 6. Beat the butter and sugars until pale and fluffy and then mix in the egg yolks one by one. Then add in the vanilla extract and combine.

2. Then mix in the flour in two batches so that it mixes in evenly. Stir in the orange zest and role the dough into 22 walnut size balls and bake in the oven for 15 minutes.

3. Meanwhile mix the icing sugar and enough orange juice so that the icing is thick but runny. Once the biscuits have cooled dip half of the biscuit into the icing and then straight into the sprinkles and leave to dry.

4. Then you can eat them!!
