Lemon, Lime and Mint Cooler

Hey guys,

I have been loving the Starbucks Lime Refresha at the moment so I thought that I would try and do a similar recipe so that I could enjoy it at home. I hope that you could enjoy this recipe. This makes roughly eight medium glasses.

Ingredients:

1/4 cup of mint leaves and 1/4 cup to serve
1 cup of peeled and cubed cucumber
6 cups of water (I prefer fizzy water)
2 cups of lime juice
1/2 cup of sugar
2 1/2 cups of crushed ice
1 or 2 sliced limes

Method:

1. Put the mint, water, lime juice, half of the cucumber and the sugar in a jug and leave in the fridge for 20-30 mins so that they can infuse. Then get rid of the mint and cucumber.

2. Add in the rest of the cucumber, ice, the rest of the mint and sliced lime. Stir and then serve.

Thank you for reading. Hope you enjoyed. If you want to see more please look through the archive and subscribe.

Fresh Detox Juice

Hey guys,

As the sun is coming out I have been loving detox juices that are fresh and packed with good vitamins. I think that this recipes is a really good juice if you want something more fresh but still thick and yummy. Limes, cucumbers and mint always go so well together so I thought that this would be a good recipe to share with you guys.

Ingredients:

2 medium cucumbers, peeled and roughly chopped
1/2 cup of lime juice
big bunch of mint
1/4 cup of sugar
1 1/4 cup of water (you can also use coconut water if you would like)
handful of ice, to serve
lime slices, to serve

Method:

1. Put all the ingredients in a blender and blend until it is a good consistency. It may still be a little bit bitty so put it through a sieve, pushing through as much liquid as possible.

2. Then put into a large jug, adding in the lime and lime slices. You can keep in the fridge or serve straight away.

I love simple recipes like this as I think that they are super quick to make but are still healthy and packed full of flavour. I hope that you enjoyed this recipe and if you want to see more please subscribe. It would mean alot, thank you

Chatty Post

Hey guys,

I thought that I would write a little bit more of a chatty blog post instead of a recipe today. This blog was started back in January and was just a simple idea that two friends had. We have posted around 44 blog post since the start including cookie recipes, chocolate recipes, savory and sweet.

I never expected to get so many views. This was just a little outlet where I could type up recipes and have a bit of fun. I took some of these recipes from books or websites but others I had used in the past or made up myself. When we started to get views, like 20 or 30, I just thought that it was me and my family looking at it but I soon stopped my computer from tracking my views and then I realised that other people were looking at this blog.

We have had over 500 views which I am very grateful for and I have enjoyed writing every blog post. To many people a couple of hundred views may not seem alot but it will always mean something to me.

At the moment I am revising for my exams and once they are done I was thinking of starting a youtube channel to go along with this blog. You can put a face to a name. Please leave comments of what you think and it would mean so much if you were to commet or subscribe.

Thank you

Kallo Rice Cakes with Cream Cheese, Tomato and Red Onion

Hey guys,

Here is a savory snack that is easy to make and can be something simple that you can have after coming back from work/school. Kallo rice cakes have only 25 kcal per rice cake and have only corn (99%) and sea salt(1%) in them.

Ingredients:

2 Kallo rice cakes
1 large tomato
1/2 a red onion
1 tsp of olive oil
cream cheese
pepper

Method:

1. First dice your onions and tomatoes into small chunks. Then mix them with the oil and leave on the side.

2. Put a generous amount of cream cheese all over the Kallo rice cakes. Then drain most of the oil from the onions and tomatoes and split the mixture onto the two rice cakes. Drizzle with the oil that is left and sprinkle on some pepper if you like.

3. Then they are ready to eat! These are a good snack and will give you energy to last till dinner time.

I hope you enjoyed this quick and simple recipe.

3. Roll out the dough on a floured surface and then wrap in clingfilm. Put in the fridge to chill until needed.

Triple Chocolate Cookies- Tanya Buur

Hey guys,

Recently I read Tanya Burr's Book, Love Tanya and I loved the baking section so I thought I would share with you one of my favorite cookie recipes. There are many recipes in this book and if you don't have the book you should get. I absolutely love cookies and I hope you enjoy them too. This recipe make ten quite big cookies that you can munch through whilst watching your favorite film or snuggles up with a book and a cup of tea.

Ingredients:

200g of unsalted butter
300g of caster sugar
1 large egg
275g of self-raising flour
75g of cocoa powder
Little dash of milk
A large bar of white, milk and dark choclate
3 daim bars

Method:

1. Preheat your oven to 200C. Then whizz together your butter and sugar until it's a smooth consistency. Crack in the egg and then put in your dry ingredients and blend it together. If your mixture looks to dry, add some milk.

2. Now for the chocolate... break it all up and throw into your dry mixture. Very importantly, don't forget the Daim bars! They give the cookies an incredible and unexpected toffee crunch. Once you've mixed the chocolate in, line two trays with baking paper or foil and then prepare to get messy! Use your hands to separate the mixture into ten blobs.

3. Now pop your chocolatey blobs in the oven for 11 minutes - I have found this to be the perfect baking time. When you take them out they will not looked cooked; it is vital you know this, as it will be very tempting to leave them in for longer and then they'll be hard and overcooked once they are cool. Just take your cookies out after 11 minutes and leave them to cool for about 30 minutes. Use this time to put on one of your favorite soundtracks and dance round the kitchen - Jim and I often sing along to Drake. I don't know why but this album is often our baking soundtrack.

I hope that you liked this recipe and if you would like more from Tanya Burr's book then please leave comments.
Thank you
Xx.

Pot Roast Chicken

Hey guys,

Here is a slightly different recipe. This is one of my most loved chicken recipes (apart from perri perri chicken!). It is moist and tasty so I hope that you enjoy it. If you want to see more savory recipes then please leave comments below.

Ingredients:

2 tbsp of vegetable oil
4 rashes of streaky bacon, cut into chunks
2 cloves of garlic
2 leeks, sliced into rounds
4 sprigs of thyme
2 bay leaves
2 sticks of celery, roughly chopped
4 small carrots, whole
2 parsnips, halved lengthways
a dozen baby potatoes
2.4kg whole chicken
400ml of chicken stock

Method:

1. Preheat the oven to 160C. In a large casserole dish, heat up the oil and then add in the streaky bacon, garlic and leeks in a pan. Once they have started to soften add in the thyme, bay leaves and celery.

2. Wait till everything in the pan has softened and then add in the carrots, parsnips, baby potatoes and then add in the chicken stock. The potatoes, carrots and the parsnips will boil in the chicken stock.

3. Then add in the chicken, pop on the lid and then put it into the oven for 1 hour and 25 mins. After the timer has gone, take off the lid and leave the chicken to brown for another 20 mins.

4. Take the chicken and the vegetables out of the pan. Place them on a warm dish and pop the sauce that is left  on the heat. Skim off any of the fat and if the sauce is too thin heat until thick.

5. Carve the chicken and serve up with the vegetable. Put the sauce in a jug and serve.

Hope you liked this little something different

2/3 cup of milk
1 tsp of cinnamon
25g of butter
8 thick slices of bread
1 cup of greek yoghurt
125g of blueberries
125g of strawberries
2 tbsp of maple syrup

Method:

1. Preheat the oven to 150C and line a big baking tray with baking powder.

2. Mix the blueberries, strawberries and maple syrup in a bowl.

3. Whisk the milk, eggs and cinnamon.

4. Melt one quarter of the butter in a pan and dip two slices of the egg mixture in a bowl. Cook the bread for 2 minutes on each side. Transfer onto a baking sheet and put in the oven to keep warm. Then repeat with the other pieces of bread.
