Afternoon Tea- Classic Scones with Jam and Clotted Cream

Hey guys,

We are going to start a new Afternoon Tea series. I love afternoon tea and think it is so cute and yummy. Hope you enjoy this series and comment any recipes that you want to see.

Ingredients:


350g of self-raising flour
pinch of salt
1 tsp of baking powder                                  
85g of butter, cubed
3 tbsp of caster sugar
175ml of milk
1 tsp of vanilla extract
1 tsp of lemon juice
beaten egg, to glaze
jam and clotted cream, to serve

Method:

1. Heat the oven to 200C/190C fan/gas 7. Tip the flour, salt and baking powder into a bowl and mix. Rub in the butter with your finger tips until your mixture looks like fine crumbs.

2. Put the milk in a microwavable jug and pop in the microwave for 30 seconds. Add the vanilla and lemon juice and mix well. Line a baking tray with baking paper.

3. Make a well in the dry mixture and add in the milk mixture. The mixture may seem wet but tip out onto a well floured surface and kneed the dough. If the dough is still very wet then add some more flour.

4. Fold the dough for about 2-3 mins and then roll out 4cm thick dough. Use a 5cm cutter and dip into the flour. Then cut out some scones and pop onto the lined baking. Then re roll the dough and repeat the process. Then wash the scones with egg wash and bake for 10 mins.

You can eat these hot or cold. Just cut them in half and use a generous amount of clotted cream and jam.
