Afternoon Tea- Summer Sandwiches

Hey guys,

To continue on the theme of Afternoon Tea I thought that I would share with you a couple of summer sandwich recipes that would be really good for a party.


Open Chicken Caesar sandwich (serves 2)
Ingredients:

2 skinless chicken breasts
1 tsp of sunflower oil
2 mini gem lettuces
2 tbsp of low fat crème fraiche
1 tbsp of grated parmesan
2 thick slices of crusty bread
1 small garlic clove
squeeed lemon juice

Method:

1. Heat a gridle pan and season the chicken with salt and pepper, rub with oil. Pop in the pan for 7 minuites a side and or until cooked through.

2. While the chicken is cooking separate the lettuces leaves and mix the lemon juice, low fat crème fraiche and parmesan in a bowl with one tsp of water

Afternoon Tea- Perfect Summer Drinks

Hey guys,

Here are some drinks to go with our Afternoon Tea series for our blog.

Citrus Iced Tea (non alcoholic) Serves 4-6

Ingredients:

6 ordinary tea bags                                                    
2 tbsp of caster sugar
10 springs of mint
300ml of fresh orange juice
juice 1 lime
1/2 a sliced orange and mint to serve

Method:

1. Make the tea in a pot with 1.2 litres of boil hot water, sugar and the mint. Then leave for 10 mins to infuse, then strain. Leave until cooled.

2. Pour into a jug and add the orange juice, lime juice, mint and plenty of ice.

Pimm's Iced Tea (alcoholic) Serves 4-6

Ingredients:

4 tea bags
20g pack of mint                                                                        
100g of caster sugar
juice of 2 large oranges, plus extra wedges to serve
juice of 2 lemon, plus extra wedges to serve
400ml of Pimms No 1
a few sliced strawberries and ice to serve

Method:

1. Put the teas bags and half of the mint into a large jug with 1.2 litres of boiling water. Leave for 10 mins to infuse, then strain and add in the sugar. Leave to cool.

2. Once cooled remove the mint, add in the lemon and orange juice, Pimms, strawberries and ice. Then serve


Classic Tea

At Tea parties it is important to have a selection of teas, Earl Grey, peppermint, camomile, fruit, herbal and, of course, English Breakfast.

Waitrose Cupcakes- Woodland Creatures


Hey guys,

For my brother's birthday my mum bought some cute cupcakes just in case I didn't get chance to make a cake myself. We have just eaten some of them but I thought I would show you a couple pictures of them as they can be really good designs for cupcake.


Some of these are chocolate and others are a light vanilla flavour.

Mary Berry Chocolate roulade with raspberries

Hey guys,

A while ago I first tried to make a chocolate roulade and  it turned out really well so I decided to make another one with raspberries in. My parents are going out tonight so I made this for them to take with them. I hope you enjoy this recipe and please keep sending us your photos.

Ingredients:

6 eggs, separated
175g of caster sugar
2 tbsp of cocoa powder
300ml of double cream, whipped
icing sugar, to dust
handful of raspberries

Method:

1. Preheat the oven to 180C/160C fan/gas 4. Line a baking tray 33x23cm roulade tin with baking parchment. Put the chocolate in a glass bowl and slowly melt over a pan of simmering water. Make sure that the water doesn't touch the bottom of the glass bowl. Then take off the heat and set aside


2. Separate the eggs and put the egg whites in a big bowl. Then whisk until they are in soft peaks and you can hold the bowl above your head and they won't fall out.

Displaying FullSizeRender.jpg3. In a separate bowl whisk the sugar and the egg yolks until glossy and thick. Mix in the melted chocolate well and then begin to fold in the egg whites. Use a big metal spoon and take a spoon of the egg whites and begin to fold them into the chocolate and sugary mixture. Then slowly fold in the rest of the egg whites.

4. Make sure that it is well folded and then carefully mix in the cocoa powder trying not to knock out any air. Carefully pour the mixture into the lined tin and pop in the oven for 20-25mins.

5. Remove from the oven and then leave to cool completely. Tip the roulade out onto some baking parchment that is dusted with icing sugar.

6. Whip the cream until it can just about hold its shape a then spread onto the roulade making sure not to spread to close to the edges. Then scatter the raspberries all over the cream. Make a cut that goes half way through the sponge and then begin to do a tight roll. If it cracks don't worry, this is part of the beauty of the roll.

7. The pop on a plate and it is ready to serve.

Afternoon Tea- Classic Scones with Jam and Clotted Cream

Hey guys,

We are going to start a new Afternoon Tea series. I love afternoon tea and think it is so cute and yummy. Hope you enjoy this series and comment any recipes that you want to see.

Ingredients:


350g of self-raising flour
pinch of salt
1 tsp of baking powder                                  
85g of butter, cubed
3 tbsp of caster sugar
175ml of milk
1 tsp of vanilla extract
1 tsp of lemon juice
beaten egg, to glaze
jam and clotted cream, to serve

Method:

1. Heat the oven to 200C/190C fan/gas 7. Tip the flour, salt and baking powder into a bowl and mix. Rub in the butter with your finger tips until your mixture looks like fine crumbs.

2. Put the milk in a microwavable jug and pop in the microwave for 30 seconds. Add the vanilla and lemon juice and mix well. Line a baking tray with baking paper.

3. Make a well in the dry mixture and add in the milk mixture. The mixture may seem wet but tip out onto a well floured surface and kneed the dough. If the dough is still very wet then add some more flour.

4. Fold the dough for about 2-3 mins and then roll out 4cm thick dough. Use a 5cm cutter and dip into the flour. Then cut out some scones and pop onto the lined baking. Then re roll the dough and repeat the process. Then wash the scones with egg wash and bake for 10 mins.

You can eat these hot or cold. Just cut them in half and use a generous amount of clotted cream and jam.

Afternoon Tea Series

Hey guys,

Seeing as the weather in the UK is getting warmer we thought that we could start a Afternoon Tea series that would be perfect for summer.

There are loads of cute things that you can do to have a perfect tea party in style! As it is coming up to spring/summer and the weather is getting better these can be really cute things to have with friends or family. Things like this are simple but yummy and can be quick and simple to make. If you are having more of a sit down meal/ chat you can do things like edible place cookies saying each persons name. This can be a really cute way of setting up your table. With a cute table cloth and some pots of tea this can be a really wonderful way to get the family round.

Flapjacks- Feelgood Food

Hey guys,

Thank you for all the support that we have had on this blog. Today's recipe is going to be  a yummy flapjack recipe that has been recommended by a friend. We have changed little bits to suit ourselves but you can change what you want so that you like it.

Ingredients:

50g of unsalted butter
2 tbsp of smooth peanut butter
3 tbsp of honey or maple syrup
2 ripe bananas, mashed                                      
1 apple peeled and grated
250g of rolled oats
85g of apricots, diced
100g of raisins
85g of mixed seeds (pumpkin and sunflower are good)

Method 

1. Preheat the oven to 160C/ 140C fan/ gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey in a pan until it is all combined. Add in the banana, 100ml of hot water and the grated apple.

2. Tip in the rolled oats, apricots, raisins and mixed seeds into a bowl and add in the apple and banana mixture. Mix well and then pour into the lined tin. Bake for 55 mins then leave to cool and cut into squares.

Healthy Breakfast- Fruit and Nut Yoghurt Bowl

Hey guys,

Here is another healthy breakfast recipe. I love heaving a healthy start to the day that will fill me up but not make me feel like I am eating badly. This recipe can be adapted and changed to fit what you like and don't like.

Ingredients: 

Low fat natural yoghurt
Mixed pot of raisins, almonds and other nuts and berries
Any fruit you want e.g oranges, mangoes, rasberries etc.
Cinnamon
Honey

Method:

1. Put the yoghurt, fruit and nuts in a bowl and then add much honey and cinnamon as you want.

This simple recipe can be changed but if you want a low sugar breakfast try not to use berries as they have a high sugar content.
