Today's blog is going to have a couple of different summery ice lolly recipes.
The first is going to be a rhubarb and custard ice lolly. Rhubarb and custard sweets are a classic favourite so I thought that I would try to make this classic something more appealing in the summer.
Ingredients:
3 cups of rhubarb
1 cup of caster sugar
1 cup of custard
1/2 cup of apple juice
Method:
1. Preheat the oven to 180C. Rhubarb isn't a very soft fruit so in order for it to be more edible you need to roast it.
2. Pop the rhubarb in a dish a sprinkle over all the sugar. Then put the rhubarb into the oven and leave for 5 minutes. Once the timer is up, stir the rhubarb and then leave for another 5 minutes, until it is soft.
3. Blend the rhubarb and the apple juice and leave to cool.
4. Whilst the rhubarb is cooling get out some ready made custard but so not heat up.
5. Once the rhubarb is cool get some ice lolly mold and layer the rhubarb and the custard in alternate layers.
6. Then put in the freezer over night or around 5 hours and they are ready to eat.
The second recipe is a bit more refreshing. It is a lime and lemon ice lolly. You can add a bit of vodka for the adults if you want a bit more of a grown up twist to this.
Ingredients:
3/4 cup of lemonade
3/4 cup of lime juice
1 lime sliced into disks
1 lemon sliced into disks
Method:
1. Mix the lemonade and the lime juice in a jug.
2. In the ice lolly molds, place a couple of slices of lemon and lime.
3. Then pour in the lemonade and lime mixture. Put in the freezer for a few hours or even better, over night.
The final recipe is one of my favourites, peaches and cream. Peaches are my favourite fruit and so putting them in a lolly recipe was just logic for me.
Ingredients:
570g of fresh peaches
2 tbsp of runny honey
3 cups of vanilla yoghurt
1 tsp of vanilla extract
Method:
1. Skin and de-stone the half of peaches. Put them in a food blender with the honey. With the remaining peaches dice them and stir into the peach mix. DO NOT BLEND THEM IN.
2. In a bowl mix the yoghurt and the vanilla extract
3. Then layer the peach and the yoghurt mix in ice lolly molds and leave in the freezer over night.
