Summer Beans on Toast with Parma Ham

Hey guys, 

With a heat wave swallowing the UK up at the moment I thought it would be a good time to write a new summer lunch time recipe. Because it is so hot I don't like to eat slot at lunch but this recipe is tasty but light. 
I am quite a fan of beans on toast but it can be too much in the summer. Beans on toast, to me, is a winter comforting food so her is a lighter summer alternative. 

Ingredients:

300g of podded broad beans
200g of green beans 
4 heaped tbsp of fresh pesto
A large ciabatta cut in half and half again
Olive oil, to drizzle
2 garlic cloves, crushed
140g of light cream cheese
4 slices of Parma ham
70g of rocket

Method:

1. Heat up a pan of water until it is beginning to boil. Also heat up a griddle pan to a high heat. 

2. Put the broad beans and the green beans into the boiling water and cook for around two minutes or until tender. Then drain them and remove the broad bean skins. Mix the vegetables with the pesto in a separate bowl and set aside. 

3. Drizzle one side of ciabatta and also rub in the garlic into the bread. Then place that side onto the griddle pan until it gets grill lines. This should take around 2 minutes. 

 4. Place the ciabatta onto a plate and spread with a thin layer of cream cheese. Then pop on a spoon of the veg and pesto, slice of Parma ham and a handful of rocket. Drizzle a little bit of olive oil on and it is ready to eat.
